Cozonac

Cocoa and walnut cake

Ingredients

  • 2 kg flour
  • 9 eggs
  • 250 g butter
  • 500 ml milk
  • 50 g quality yeast
  • 500 g sugar
  • vanilla and orange essence
  • 5 g salt
  • shell from a lemon
  • 100 g oil
  • cocoa and walnut filling

Preparation mode

Step 1: Prepare the mayo from about 3 tablespoons flour that is put in a bowl and scald with half the amount of hot milk and beat until it becomes a soft paste that swells it.

Step 2: Over this mixture, break the yeast and place in a warm place away from cold air currents.

Step 3: Meanwhile, beat the whole eggs with the rest of the milk and add the essences. When the maya has grown, add over the flour, pour the composition of eggs with milk, and then melted butter, lemon peel and orange.

Step 4: This mixture kneads well 35-45 minutes uninterrupted; Grease the hands with oil and continue kneading until the coke is basal. The resulting dough should not be hard but more soft. If it’s virulent, add more oil and continue kneading.

Step 5: Cover the dough with a clean and thick napkin, heat and allow to grow. When the coca has grown well, take pieces in turn, stretch the well, sprinkle the filling and then run, then put in trays of long and high cake, prepared with high paper greased with butter.

Step 6: Grease the cake with the yolk mixed with oil as a mayonnaise and sprinkle with sugar for appearance. The baking should not last more than 60 minutes.
